4 lb. or 1/2 of an 8lb. watermelon cut and cubed into 1 inch cubes – or scooped into balls using a melon baller (about 5 cups of cubed watermelon)
1/2 red onion – sliced
1 cucumber – cut down the middle long ways – then slice into 1/4 inch pieces
1 cup feta cheese – crumbled
1/3 cup coarsely chopped mint leaves
1/3 cup oil
3 tablespoons lemon juice
In a large bowl, whisk together oil and lemon juice, then add a pinch of salt and pepper. Add the watermelon, cucumber, red onion and feta and gently toss together all ingredients. Enjoy!
