Pâte Sucrée

Ingredients for a 1-9 inch tart

• 8 oz. flour
• 4 oz. butter, very cold
• 2 oz. sugar
• 1 tsp. salt.
• 1 egg mixed with 1 Tbsp.
of cold water
• Ice water, if needed


In the bowl of a mixer, combine flour and salt. Cut the cold butter into very small pieces and add to the dry ingredients. Mix over medium speed for 4-5 minutes until texture is sandy and no particles of butter are visible. Incorporate liquid ingredients. Be careful not to overwork the dough. Add more liquid if needed.

       Form a disk. Cover it with plastic wrap. Let it rest in the refrigerator for at least 30 minutes.
