Greek Chicken Skewers

Ingredients
1 1⁄2 tbsp dried oregano
1⁄4 cup fresh flat leaf parsley, chopped
1 tbsp minced garlic
1⁄4 cup Bowl & Basket Specialty Olive Oil
1 lemon, zested and juiced
1 tsp red chili flakes
1/2 tsp salt
1⁄4 tsp ground black pepper
2 lbs Wholesome Pantry Chicken breasts, cut into 1 1⁄2 inch chunks
pita, for serving
cherry tomatoes, for serving
feta cheese, for serving
cucumber slices, for serving
sliced red onion, for serving
Directions

1. Combine all ingredients except chicken in a large ziplock bag or a glass bowl with a lid. Once well mixed, add chicken and toss well to coat. Let marinate for at least 1 hour but preferably overnight in the fridge.

 

2. When ready to cook, either preheat the grill to medium high or place a grill pan in the oven and preheat to 400 degrees. Skewer chicken pieces onto metal skewers and discard excess marinade

 

3. Cook chicken skewers either via the grill for 5-6 minutes per side or in the oven on the BROIL setting 7-8 minutes per side, or until fully cooked.

 

4. Serve with pita, sliced cucumbers, cherry tomatoes, feta, or anything else desired.
