Ingredients
1 bag (20 ounces) frozen straight cut sweet potato fries
6 slices corned beef, coarsely chopped
6 slices Swiss cheese, thinly sliced
1 cup drained, refrigerated sauerkraut
1/2 cup Thousand Island dressing
1/2 tablespoon caraway seeds
Directions
1. Preheat oven to 400°; line rimmed baking pan with parchment paper. Spread fries on prepared pan; bake 20 minutes. Top fries with corned beef, cheese and sauerkraut; bake 5 minutes or until cheese is melted.
2. Serve fries drizzled with dressing sprinkled with caraway seeds. Makes about 8 cups.
