Ingredients
1 cup Wholesome Pantry Organic Unsalted Sunflower Seed Butter
½ cup Wholesome Pantry Organic Unrefined Coconut Sugar
¼ cup Bowl & Basket Maple Syrup
2/3 tsp Bowl & Basket Maple Syrup
2 Bowl & Basket Eggs
1 tsp. Bowl & Basket Vanilla Extract
1/3 cup Bowl & Basket Unsweetened Baking Cocoa
1 tsp Bowl & Basket Baking Powder
1 ½ tbsp. Bowl & Basket Semi-Sweet Chocolate Chips
1/8 tsp Bowl & Basket Ground Cinnamon
¾ Cup Bowl & Basket Non-Fat Vanilla Yogurt
3 ½ tbsp. Bowl & Basket Unsweetened Cold Brew
Directions
Filling:
- Whisk together cold brew, non-fat greek yogurt, and maple syrup in a large bowl. You can swap muddled strawberries or coconut milk for the cold brew.
- Line a 6x8 baking dish with parchment paper. Pour in mixture, making sure surface is smooth and about one inch thick.
- Place in the freezer for at least 2 hours covered.
Brownies:
- Preheat your oven to 350 degrees Fahrenheit.
- Prepare two 6x8 baking dishes by lining them with parchment paper.
- In a large bowl mix together your sunflower seed butter, coconut sugar, vanilla, eggs, and maple syrup until fully combined.
- Next add in your cocoa powder, baking powder, salt, and cinnamon and mix until batter is thick.
- Mix in 2/3 of your chocolate chips.
- Separate the batter into two halves and pour each half into a 6x6 glass baking dish lined with parchment paper.
- Top with the remaining chocolate chips and a light sprinkle of coconut sugar.
- Place both dishes in the oven for 18-20 minutes or until baked thoroughly.
- Allow to cool before placing in the fridge for 30 minutes to 1 hour.
Assembly:
- Remove the brownies from the fridge and remove your frozen yogurt from the freezer
- .Stack the frozen yogurt mixture onto one of the brownie trays by flipping the baking dish and using the parchment paper to guide the layer. Remove the parchment paper once placed.
- Add the next brownie layer by flipping the baking dish onto the frozen yogurt layer. Remove parchment paper.
- Using a knife cut the brownies and frozen yogurt into 12 even squares (2 cuts across and 3 cuts down) to create perfect Brownie Java Sandwiches!
- Serve and enjoy!
