Eggplant-Ricotta Bites

Ingredients
1/2 cup whole milk ricotta cheese
1/4 cup shredded Parmesan cheese
8 pieces frozen breaded eggplant cutlets
1/2 cup tomato bruschetta topping
2 tablespoons chopped fresh basil leaves
Directions
- In small bowl, stir cheeses. Makes about 2/3 cup cheese mixture.
- Prepare eggplant cutlets in oven as label directs; cool slightly.
- Spread cheese mixture over 1 side of each eggplant cutlet; cut into quarters, and top with bruschetta and basil. Makes 32 bites.
