Ingredients
1 box Barilla® Penne pasta
1 Jar Barilla® Creamy Genovese Pesto
1 Tablespoon Extra Virgin Olive Oil
1 Lemon, Juiced and ½ Tablespoon Grated Lemon Peel Reserved
2 Pints Multicolor Cherry Tomatoes, Halved
2 Packages Burrata Cheese [12 Oz. Total], Coarsely Chopped
Sea Salt to Taste
Black Pepper to Taste
Directions
  1. Cook pasta 1 minute less than package directions, drain, and toss with olive oil, set aside flat on a sheet tray to cool.
  2. Toss pasta with pesto, lemon juice, lemon zest, cherry tomatoes, and black pepper.
  3. Top each individual portion with coarsely chopped cheese before serving.
